Your Solution to the Lunchtime Salad Rut: Salad in a Jar!



I LOVE mason jars.

There is something so down home, nostalgic and satisfying about them. And the clear, heavy glass makes the perfect display window to whet your appetite.

Fill the jars with simple, wholesome foods to create culinary art that feeds your taste buds, nourishes your cells and tickles your imagination!

Here are a couple of my faves!

Ingredients listed from bottom layer to top!



Smoked Salmon, Quinoa and Tzatziki

Skin Repairing | Bacteria Fighting | Gluten Free

  • 1/4 cup tzatziki (A light and healthful greek dressing of yogurt & cucumber. I use the Trader Joe's version)

  • 1 3/4 ounces celery, very thinly sliced

  • 2 small beets, peeled and very thinly sliced (Can use the pre-cooked, vacuum packed beets)

  • 1/2 cup cooked and seasoned white and red quinoa

  • 1 3/4 cup hot-smoked flaked salmon (I use Trader Joe's wild black pepper smoked salmon)

  • 1 ounce beet greens (kale or arugula ok too)

  • 2 tablespoons chopped toasted hazelnuts


Curried Chicken

Hydrating | Digestion Boosting | Gluten Free

  • 2-3 tablespoons Green Goddess dressing (recipe below) + 1 teaspoon mango & 1/2 teaspoon curry

  • 1 celery stalk, chopped

  • 1/2 cup cooked and seasoned brown rice

  • 2 1/2 ounces cooked, skinless chicken breast, shredded

  • 3/4 ounce red leaf lettuce, torn

  • 1/3 ounce cilantro leaves

  • Small handful of almonds

Green Goddess Dressing

  • 1 avocado, pitted and peeled

  • 1 green onion, coarsely chopped

  • small handful basil leaves

  • 2 tablespoons lemon juice

  • 6 tablespoons extra-virgin olive oil

  • 1 tablespoon chopped tarragon

  • 4 tablespoons water
