The Most Scrumptious, Nutritious, (and totally grain-free) Chocolate Chip Cookies Ever!

3 tbsp grass fed butter or virgin coconut oil, softened
1/3 cup honey
2 tsp vanilla extract
1/2 tsp baking soda
2 1/2 cups almond flour
1/2 cup medium shredded coconut
1/2 cup chopped walnuts
1/2 chocolate chips

Preheat oven to 325.
Line a cookie sheet with parchment paper.
In a medium sized bowl, beat egg with fork until frothy.
Add oil or butter, honey and vanilla extract and mix well.
Add baking soda and almond flour and mix until combined.
Add coconut, walnuts and chocolate chips.
Form 2-tbsp sized balls about 2 inches apart on cookie sheet.
Wear rubber gloves when forming balls to avoid stickiness.
Bake for 16-18 minutes or until the bottom of cookies are golden brown.
Remove cookies from oven and cool completely.
Reduce oven temp to 170.
Return cookies to oven and cook for 90 minutes.
