Fun Fall Recipes: Otesaga Apple Cake with a Tribe Twist
Otesaga Resort Hotel is an architectural masterpiece on the stunning Glimmerglass lake in Cooperstown, NY. The hotel was built in 1909 and still run by the original family. This basis of this recipe is theirs but I cleaned it up a bit to make it healthier. The Tribe version is gluten free and uses coconut sugar instead of white sugar. Let me know how you like it!
1 1/4 cup grapeseed oil
2 cups coconut sugar
1/2 tsp almond extract
1 tsp vanilla extract
3 cups apples
1 cup walnuts
2 1/2 cups Bob's Red Mill all-purpose gluten free flour
1/4 tsp xanthan gum (for gluten free recipes)
Mix eggs, oil, sugar, vanilla and almond extracts with paddle on Kitchen Aid machine. Add apples, walnuts and mix, then add dry ingredients and mix until combined.
Beat mixtrue for one to two minutes on medium speed to develop cake structure.
Grease and flour either one bundt pan or two loaf pans.
Divide batter into prepared pans and bake at 325 for 70 minutes.
