Fun Fall Recipes: Gourmet White Pizza
Who doesn't love pizza? This recipe was inspired by a trip to Wegman's supermarket last week. I ran in for a few items for homemade vegetable soup and saw the most gorgeous fresh basil ever. I had to buy it. I'd figure out what to do with it later, I told myself! Here is what it became!
I use three cheeses for this:
Organic Ricotta
Mozzarella
Fresh Pecorino (The Cheese Guy)

Fresh Basil Pesto:
2 cups fresh basil leaves, packed
1/2 cup freshly grated Romano or Parmesan
1/2 cup extra virgin olive oil
1/3 cup pine nuts
3 garlic cloves
1/4 tsp salt
1/8 tsp ground black pepper
Throw all ingredients into a food processor and blend until smooth. Delicious as the base for white pizza!
